  1. Spread the watermelon pieces in a single layer on a sheet pan or large plate lined with paper towels. Sprinkle evenly with kosher salt and let sit for 10 minutes. This draws excess surface moisture out of the flesh so the dressing will coat and cling rather than pool at the bottom of the bowl. Pat the pieces gently dry with additional paper towels before assembling.
  2. While the watermelon rests, place the red onion slices in a small bowl of cold water and let them soak for 10 minutes, then drain and pat dry. This softens their sharp, sulfurous bite while keeping the crunch intact.
  3. In a small bowl or jar, whisk together the lime juice and honey until the honey dissolves. Stream in the olive oil while whisking to form a loose emulsion. Season with a pinch of flaky salt and the cracked black pepper.
  4. Arrange the watermelon and cucumber (if using) on a wide, shallow serving platter or in a large wide bowl — a single relatively flat layer shows off the colors. Scatter the drained red onion over the top.
